Holding hands may seem like an innocent gesture, but they show more than a simple interlocking of fingers. Your hands are one of the most essential parts of your body: you build with them, feed with them, hold with them, touch with them, fight with them; they are the tools of the human body. To take a hold of another’s hand is to break from living individually. It is to link yourself to another being, to momentarily entwine your life with another’s, to promise, for a moment, that you need not face the world alone. More simple, more aesthetically naive than other forms of affection, i.e kissing, hugging, sexing.., the act of holding hands is often trivialized in its true implications.

This is a recipe I came up with for my girlfriend’s brother’s birthday cake last year. I’m not quite sure why I never shared this one, because it was by far the best ice cream cake I have ever had.

Crust
1/4 cup butter (cold)
1 cup flour
1/3 cup sugar
1/4 tsp vanilla
Preheat oven to 350° F. Combine flour, sugar and vanilla. Then crumble the flour mixture together with the cold butter using your fingers. Press into the bottom and up the sides of a 9 inch spring form pan and bake until dry and crumbly (approx 5-8 minutes).
Fudge Layer
3/4 cup firmly packed light brown sugar
1/4 cup water
3 tablespoons maple syrup
2 tablespoons butter
1/2 cup chopped toasted pecans
1/4 cup whipping cream
Combine the first three ingredients in a saucepan over medium heat. Stir constantly until a candy thermometer reads 234° F (soft ball stage). Remove from heat and stir in the butter and cool. Then, stir in the chopped pecans and whipping cream.
Ice Cream Layer
1 quart maple ice cream (I purchased it from Marble Slab up here in Canada).
1 quart walnut ice cream (Purchased from the same place)
10 strips of bacon (I picked this up from a local market. I find that finding higher quality, slightly thicker cut bacon, makes this taste better).
Enough brown sugar to cover bacon on both sides.
Leave the ice cream out on the counter to soften. While waiting, line a banking sheet with aluminum foil (shiny side up) and preheat an oven to 325° F. Lay the bacon in one flat layer on the baking sheet and sprinkle with a liberal amount of brown sugar, covering the bacon completely. Place in oven and check often, as the sugar can burn quickly. When the sugar has melted and is bubbly, remove bacon from oven, and turn over using tongs. Sprinkle other side with liberal amounts of brown sugar and place back in oven until sugar is melted and bubbly and bacon is crisp.
Remove the bacon from the oven and allow it to cool. Once cool, save two whole pieces and coarsely chop the remaining strips.
Once ice cream is soft, combine the two flavours together and add the chopped bacon. You are now ready to prepare the cake!
Preparation
Spread the fudge layer to the edge of the crust in the spring form pan. Pour the ice cream over top and freeze the cake overnight or until the ice cream is completely set. Remove from freezer and run a hot knife around the edge of the pan. Remove the sides of the spring form pan and garnish with candied bacon strips.

I always say to everyone how much I love to eat and cook, and trying new recipes and new restaurants/cuisines is a huge part of my life. I feel that through most of my blog posts this far though, I haven’t really reflected that. I’m going to take the bit of time that I have to share a few recipes I’ve favourited over the years and spread the love for cooking/eating.

Made some big realizations today and I’m so glad that I’m finally starting to feel better. Sometimes it’s hard to keep motivated and positive, but just underneath it all, I always know that you are there, believing in me, and helping me along even when I feel so confused and lost. And that means more to me than I will ever be able to describe. And the strength that we both feel when we’re together shines brighter than everything else, reminding me of what really matters in life.
